Microwave Zucchini Protein Muffin

Everyone knows that there is zero 'bread' in "Zucchini Bread". It's cake. 100% cake. Well, this zucchini muffin really is 100% protein-spiked muffin that tastes just like the original version of the protein muffin.  If you frost it, it does taste like cake. Really this muffin is just a sneaky way to add some veggies into your diet and barely notice their presence.  Just think: you could make your husband and children eat veggies without their knowledge!

And in honor of Eden's birthday, I arranged the food in order to bring a smile to her face. (And yours)?

Important ingredients

Pre-made muffin mix: I combine the dry ingredients in a jar ahead of time so that I just scoop the right amount and add to pumpkin and egg whites (a little math is involved when you make the mix...nothing you can't handle)

The added zucchini makes the batter more wet, so you need to add time while microwaving

Cooked 4 minutes and ready to eat



Zucchini Protein Muffin:

Makes one large serving.  160 calories **; 12.5 g protein; 18.5g carb; 5g fiber; 1.75g fat 

Ingredients:
  • 2 Egg whites (**If using liquid egg whites use 1/2 cup and add 20 calories)
  • 1/4 cup pumpkin (3 T applesauce or other starchy carb works too)
  • 2 T coconut flour* (1 T also works, and results in 40 fewer calories)
  • 1/2 tsp baking powder
  • stevia or other granular sweetener to taste
  • 1 T. cocoa powder (Hershey's Special dark cocoa is best)
  • 2-3 T grated raw zucchini 
Method: Spray a bowl with oil. Mix ingredients with a fork. Microwave on high for 2-4+ minutes.

Zucchini muffin: you can see the veggie shreds but you can't taste them.


You might need to play around with cooking times and possibly vary the ingredient ratios to get your desired consistency. I sometimes make a mini-version by halving the flour and egg whites. You can use nearly any flour or carby fruit , but I have found that the ingredients that make this so moist yet fluffy are the pumpkin (versus other fruit or veggies), the coconut flour and the dark cocoa powder in combination. Yet I've received emails from loads of people who have had great success changing things up. Let me know if you discover a great combo!

Q:  If you've had success with modifications for microwave muffins, what were they?  Has anyone used agave and can advise a reader on how much to use?  Do you sneak veggies into food either for yourself or unsuspecting relatives?

    Deb it looks great! There are so many variables/versions and ways to go with this and why results may not be 100% duplicate-able for 1 person to the next, i.e. the type of canned pumpkin some are runnier than others, the zucchini itself, the egg whites, coconut flour, microwave variances, you name it...so many things could impact final result so have fun experimenting and taste testing is what I'd say....and I want to taste test this one, asap!

    GREAT idea. I'll definitely make this! I really enjoyed playing around with the mix you sent me. None of my "experiments" (other than when I followed instructions you sent me!) worked out that well, but it was still fun...

    Awww, you used the bowl! All that was missing was your beautifel self baking it in your apron, with Ellie in the background!(tee hee!)
    Love the correct order of ingredients. I saw the picture fefor I read it and thought "Oh my!"
    I'll have to Instagram another funny produce pic :P
    I have had success with baby food (carrots, sweet potatoes and B-nut squash). I have also had some success with sour cream and greek yogurt. 
    Did you peel the zucchini? I could not tell, but it doesn't look like it. I actually have one on hand so I may make this soon!
    Hope ya'll have a blast for the big Birthday Blowout Weekend - and I hope we see more video action - that just makes my day ;)

    it's honestly just such a genius idea to put the dry ingredients already combined ahead of time! WHY am i just too lazy to do something like that i just don't understand

    although i think you should make this as a birthday cake for eden and then sprinkle protein powder on top ;) have fun this weekend with the girls you LUCKY LADY!!!!!!!!!!!!!!

    I have yet to try coconut flour...it sounds pretty amazing Deb. Love that you added zucchini to this because it's my favorite vegetable.

    Tam- VEGAN!? I didn't know! You can use a flax egg but it doesn't work nearly as well :-(

    Lindsey- you obviously have your mole staked out at my house b/c I've been planning doing one in carrot (ie carrot cake muffin) and apple (apple pie muffin) so keep an eye out for that in the next 6 months or so :-)

    Ooohhh yummy... Does it taste like zucchini bread at all? I love coconut flour- it is definitely my go-to for protein muffins. And I have to point out that you used my favorite pumpkin puree. MUCH better than the Libbys crap!

    Katie- good thinking on using it as a bun. It sounds so weird that it might just be freakin awesome. If people are creeped out by having a 'chocolate bun' perhaps they could try just using oat flour (or of course, regular wheat flour)...thanks for reporting back on this!

    Oatmealafterspinning: Nope, doesn't taste like zucchini bread because zucchini bread tastes just like cake with a stick of butter. BUT it does taste delicious and chocolatey. I like getting the organic pumpkin when it's about the same price- why not?! Yes, it's tasty. And it's the secret to the fluff. (or part of the secret ;-) )
