Enter the Gazpacho smoothie. It's shockingly more delicious and less creepy than it sounds. And so so so easy. I did not use a Vitamix- just a standard blender. Today I had it in a bowl, as originally intended from the great Gazpacho gods.
The obligatory items are the veggies, water, ice and a blender. But I added the protein powder and 'the thickening gums' because otherwise I'd have to have them surgically removed from my hand.
Ingredients:
- Half a medium cucumber
- 1/4 of a sweet red bell pepper
- handful of grape tomatoes (or one medium regular tomato)
- stalk of celery
- handful of parsley
- several shakes of hot sauce of choice (Tabasco, Tapatio, Frank's)
- handful of ice
- enough water for blender to 'grab' and blend
- Optional: half a scoop of protein powder of choice
- Optional: 1/2 teaspoon of guar gum and 1/4 teaspoon of xanthan gum
| All this for 157 calories. |
| 18g of protein; 6 g of fiber; a village's weekly supply of veggies (almost) |
Q: Do you crave savory cold soups? Have you heard about fruit 'soups' that they serve in restaurants or cruise ships (I call that a smoothie in a bowl). Do you subscribe to the 'must have protein' philosophy? Why would Eden's pancake recipe call for advertisements for urinary incontinence or singles over 40?

I am not a fan of cold soups usually. I like my coffee and my soup...extremely hot! But you have piqued my interest :)
And must have protein philosophy? Not so much :)
I love how easy this recipe is, Deb!
I still have no urges for cold veggie soup but I really should......I'm still on the fruit + veg smoothie kick : )
Yours looks delicious by the way!
so....is that veggie protein good? I've seen but am hesistant to buy it. I think your gazapcho might be worth the purchase. I always want to try that watermelon soup they serve at whole foods but when the first ingredient is cream, it its a must to bring the LACTAID! danger danger.
Sounds almost like a Bloody Mary smoothie! YUM!
I knew Eden was trying to build up her bladder control website! hahahhaa
I've never been one to want cold savory soup. I like mine very hot. But this puts me in mind of maybe V-8 (which I actually do use as a soup base for my veggie soups) and I like it cold.
I've heard of the fancy fruit soups but like you, I think they are just smoothies or half melted sorbets.
I think protein is important and I get a good bit, mainly from the cottage cheese in my multiple daily smoothies!
Not sure about the bladder and singles ads on her pancake recipe - they should just offer free pony rides. Or unicorns..
Missy aka missle
Okay I think I'm officially paranoid...No lie, I was contemplating ways to make gazpacho (after seeing a recipe for tomato/watermelon gazpacho...sounds awesome!). And on top of all that was thinking of sending you a subtle demand...er request to come up with a smoothie-esque version.
Holy canoli guacomole! Here it is...the gazpacho smoothie of my dreams. Definitely think I can do this one without it ending up a sinker.
One quick question (I asked Janetha too): I need suggestions for protein powders! Looking at the choices is overwhelming and I'm OCD so I end up just staring and trying to read every label.
I actually love fruit and veggie soups cold but they have to be thick-ish but not with cream.
And I've jumped on the protein wagon now that I"ve found it keeps me fuller longer and I just feel better overall.
Averie- I so wish I wasn't addicted to protein as much as I am!
Tam- glad you're still on F&V- I need to email you- need to catch up :-)
Linds- yes it is good- kinda hempy like hemp seed butter. But when I first made it I used plain whey and it was good.
Amanda- I also thought it tasted like a bloody Mary! WOuld it be a crime to be the first person to endorse a Bloody Mary in a bowl?
Missle- cottage cheese is my new fave smoothie base too.
McIntosh- wow cosmic! Re. protein powders: honestly I buy what's on sale- I don't have a fave but lately I've liked MRM and Jay Robb. I have used Designer Whey and that's fine. You really need to just try them out- they have differing amounts of sweeteners and gums!
I've had gazpacho exactly once and it was really delicious. It was also about 100 degrees and I stopped at Le Pain Quotodien for some lunch. It hit the spot! I will have to try your version, even though my blender is sort of on it's last legs...let's see what it can do!
Life directs crazies to Eden's path so that she can snark the heck out of them. ;-)
I hate cold soups. And I like protein foods like eggs and seafood, but I don't particularly think about them in terms of a certain quota I must reach each day. There was definitely a time in my life when I would obsess over them though. The more the better with fewer calories was my diet quest at the time.
hahahaha. those circles sound about right. that's hilarious. dude! why have i never made a veggie smoothie? that's a great idea. you know i subscribe to the protein philosophy. sometimes it's a hard cross to bear, actually, and i am trying to ease up. i had a bagel thin with jam yesterday pre-workout! gasp, no protein. your gazpacho looks good and those veg photos are nice and bright! i don't typically eat cold soup, but i did have a delicious cucumber beet one not too long ago--it tasted as good as it looked. beets really do something to the color of anything! love you tons xo
My bladde is a translanted from someone over 40..so that would explain it!
Ia think I would try this sans protein powder cause I feel most shit tastes like protein powder. I had the BEST gazpacho in england, actuaully! It was a swanky restaurant at harrods. These days, I have gazapacho but I add a bit of extra protein by adding some shrimp or greek yogurt as a "garnish".
sorry, gotta peeeeeeeeeee!!!!!
I love the simplicity of this recipe! Another great way to get in those greens :)
I just had gazpacho at a dinner party on Saturday (the mosquito party as I now not so fondly call it). The recipe was from the Joy of Cooking and it was seriously incredible. Lots of super fresh veggies. Perfect for summer!
There is also a Russian cold soup I love called okroshka. Here is the recipe in case you're interested. It's really awesome! http://www.russianbites.com/okroshka-cold-summer-soup
oh oh oh!!! i love making gazpacho when all this giant ass fresh tomatoes come out in season and we buy like enormous boxes for 10 bucks and try and pretend like we're italian and make/jar our own sauce. we're so not cool but so are hahaha
I've on had gazpacho once at a cafe in a really cold night in Santa Barbara when I didn't know what I was ordering. I was totally disappointed when they brought me a bowl of cold soup. :-)
I love gazpacho! Just not the way actual Spaniards eat it "con pan" (i.e. with random soggy chunks of bread in it, blech). And you know the Livestrong ads are context sensitive... to the viewer, not the content, right?? ;)
Charlotte- haha that is hilarious! But only partly accurate: over 40 with a teeny bladder- check. Single & incontinent- thank goodness NO! Hahah
