The Classic PB&J Smoothie

Hello there! Are you sitting down? Good, because it’s recipe time! Yes, a recipe!
I realized something when Girl Hero Jenn sent me some interview questions yesterday and asked for a link to my fave smoothie: I DID NOT have a link! Gasp! (hangs head in shame)
I have been wanting to clean up my blog and make it more user-friendly for months now. In fact, I’ve wanted to start a recipe page, training page, etc…but it’s just not in the cards right now. Meanwhile, I figured I could get a leg up on it by at least getting my signature smoothie up on the blog with its own post for goodness sake!
Jenn also hooked me up with a super fun app that takes photos that resemble old-school polaroids (LOVE LOVE LOVE!) I figured that since this is a recipe for my old-school classic PB&J, I’d enlist the help of my Hipstamatic app for full effect… Weeeee! Little things make me happy. Here’s the Hipstamatic link!
Here is the recipe: The Classic PB&J Smoothie:
  • 1 scoop Low Carb Protein of your choice
  • 1/2 c frozen rhubarb
  • 4 medium frozen strawberries
  • 1/4 cup frozen blueberries
  • 1/4 cup frozen raspberries
  • 1 Tablespoon Peanut butter
  • 1 oz Torani Sugar Free Peanut Butter Syrup (optional)
  • 1/2 tsp xanthan gum
  • 3/4 tsp guar gum
  • 1 tsp almond extract
  • 2-2.5 cups water
  • 1.5- 2 cups ice
  • Edited to Add: You can also add various real or fake sweeteners and FrankenPowders such as Crystal Light in Raspberry Ice flavor, or sprinkle a half T of Sugar Free Fat Free Jello Pudding Powder in Vanilla (improves fluffiness and flavor). I do this on the regular and it works for me.

Here’s the bounty- I was taking the photo with my phone so I couldn’t use it for size comparison. I had to use postcards for that purpose…does anyone remember postcards?
I double-dogg-dare you to consume all 50 oz of this. You’ll be lying on the floor crying uncle, promise. This is 310 calories’ worth. That’s a ridiculous amount of volume for very few calories: This is why I live the Smoothie Lifestyle. Period.

On a personal note: Thanks heaps for your continued well-wishes to our family. Things are calm at the moment and Dad is enjoying being home. He deals with pain and weakness; and his appetite sucks. Thank goodness for modern pharmaceutical cocktails although I think he’d prefer a martini or a Jack Daniels on the rocks if they had the same effect. The good news is that he’s lucid, sharp (hello truth serum! What? Me? Bossy when I'm stressed?!!) and having a nice time with visitors who come and shoot the breeze. Even Girl Hero Jenn came for a visit- it was so nice. :-)

My favorite smoothie of all time is from my youth. My mom makes apricot nectar from her giant apricot tree, it's super thick and tart. I mix about 2/3 cup of that with 1/2 cup vanilla yogurt and ice then blend. It's smooth, tart, sweet and ice cold. One of my favorite things about summer.

YUM. I have been reading your blog for a bit and love your recipes! I had to comment on this one because I know my kids would love it and I like that it utilizes rhubarb!

50 oz! lol I made a huge smoothie this morning and drank it ALL and my stomach was reeling big time!

Love the pic of you and your huge turquoise eyes! So cool.

Hmmm, fave smoothie? Pumpkin pie in the winter and probably if I had a choice of anything: frozen banana with BSN vanilla + vanilla almond breeze. Not very original but so darn delish!

My favorite is your Peanut butter smoothie with peanut flour instead of protein powder, and 1/2 banana + banana extract. Then on the side coco powder, vanilla extract, salt, almond milk, maple extract and Stevia belended into a thick sauce with the hand blender. Pour on top or dip your spoon in. Yum Yum Yum......

That smoothie looks so intense. I feel so boring saying that my favorite smoothie still comes from Jamba Juice. (Although, I can't even remember when I last had one because they're terrible for you).

Love this smoothie. Now if you would just post that peanut butter ice cream recipe. (Ahem) I'm not a smoothie queen at all and therefore usually stick with water, vanilla whey, and blueberries.

You'll be amused to know that things got very ugly at Downtown Disney yesterday when they refused to embroider "Smoothie Girl" on Minnie Ears for me. WTH? It's a "proper name" to us!

Ah yes, this recipe is one of the firsts things you ever emailed me, remember? I was like what are xg and gg and where do you get them. Of course you mailed me some right away b/c you are one of the most kind hearted and generous gals I know. Yeah, I knew I'd love my Deb even back then. :)

YUM! THis recipe looks amazing. I never even knew that there was a sugar free pb syrup that existed. I need to find some of this stuff. Where do you get this?

Tash- Amazon has Torani or Da Vinci peanut butter sugar free syrup- google it and you'll find it on line. The only brick&mortar places I've found carrying it are hard-core LOW CARB stores.

Thanks for the comment on monogamy and finding Derek. I always say too that if i hadnt found Scott i would have been single. Or married something else that came along and not happy. He gets me. Seeems as if we have both found someone who gets us and makes us happy.

I'm always impressed with how elaborate your smoothies are! (I'm also impressed with your vintage postcards on the table there!!) Looks delish! You are the smoothie master.

Random question. I was about to buy peanut flour, mainly for protein shakes. Would you recommend the dark or light roast?

DamnFreshman- I think I like the dark best as the flavor is richer. But honestly both are amazing.
