Peanut Flour & Greek Yogurt infused Toasted Protein Cakes

It is now a well-known fact in blog land that April’s Protein Cakes are pretty much one the new favorite treats for protein-loving gals (and guys). Her recipe is pretty much perfect, yet we all love to tweak it, don’t we?

Take Janetha from Meals & Moves for example. She likes to add lots of baking powder to get huge fluffiness. Look at this email she sent me the other night:

I resisted the urge to use 34 tsp of baking powder, but I did add in a little greek yogurt and my new favorite product on the planet, Peanut Flour. (From a flavor standpoint, It’s PB2 on steroids). A zillion thanks to Allie from Pimp My Protein Shake for bringing me this stuff when she visited in January. I’m officially hooked. There are several types: 12% & 25% fat; dark and light. They range from 100-120 calories per 1/4 cup. Both are very flavorful. I often make them into a paste with water and use it as a faux Peanut butter. And I use it in my shakes for a lower calorie alternative to PB. But honestly I’d direct any questions over to Allie as she is truly the pimp of Protein Flour.

So far, this is my favorite version of the protein cake: the Greek Yogurt/Peanut Flour version:

  • 1 scoop Low carb Protein Powder
  • 2 TBS egg whites
  • 1 TBS 0% Greek Yogurt
  • 1 TBS Peanut Flour (either one)
  • 1 TBS Applesauce (unphotographed)
  • 1 tsp baking powder
  • sprinkle of stevia
  • 1/2 tsp almond extract (to bring out the nuttier flavors)

I put it in an oil-sprayed bowl for 1.5 min on 60% power.

I got three slices out of this one.

Edited to add: Stats: Calories 162; Protein 26g, Carbs 8.5g; Fat 2.5g; Fiber 1g

And I find the way I enjoy these most is toasted!

With my new favorite Trader Joe’s Product: Almond Butter with Flax Seeds.

Even my totally normal, non-diet-obsessed cousin was ‘nom-nomming’ over the toasted version with the nut butter.

The fact that I have not made these yet is RIDICULOUS. You create protein cake perfection!

I'm juice cleansing right now and looking at food porn is just way, way too mean to my willpower. Google reader is in the 50s - which considering the # of blogs I read religiously - is a lot. But I needed me some SmoothieGirl. And now I want a protein cake. Or protein english muffin (which is what it looks like). So, so badly. Oy.

PS. Any idea where I can get protein flour around these parts?

I haven't tried April's protein cakes yet, either! I think Mama Pea had a version some time ago which I did try, and it ended up in disaster when I used baking powder instead of soda (or maybe vice versa; I can't remember!). So I'm a bit traumatized after that. However your cake looks almost muffin-like, which makes it more likely I will try it soon :)

I don't think I have ever wished so much that I didn't almost burn my kitchen down with the toaster oven. I could really use that thing right now!! Eehh, screw it. I'll use the oven ;) If I start another fire, I'm sending you the bill!

That TJ's PB w/ flax is the BEST! Nummy! Your protein pancakes look yummy too - I've never tried that recipe (don't like protein powder) but I am cracking up over the 34 teaspoons of baking powder! That so sounds like something I would do!

I love these protein cakes!! I like making them really chocolatey with lots of cocoa powdah! ;) I haven't ever thought to toast them though, BRILLIANT as always Deb!! :)

I've never made protein cakes. But I'll experiment soon... Maybe this weekend... Not sure what the teenager will say; he is very attached to "his pancakes"... :)

I am obsessed with that almond butter. Obsessed!!! I've been using it in April's protein cookie dough, and I love all the little bits!

I'm going to order peanut flour offline because Lord knows that my health food store won't have it!

My new vegan protein cooking goal: making those protein cakes without the egg whites. Think it can be done? Me neither ;)

oooh, almond butter with flax sounds yummers. I just made some protein brownies that I cooked too long so they turned dry. Cut em into bread, toasted them and slathered them with greek yogurt for a chocolate sandwich!

I'm still experimenting with protein cakes, mine sometimes come out really dry, I think b/c I don't use eggs. They're good, but not perfect yet!

Wow. The foodblogging world gets insanely creative with their flours, gums, nut butters, and other crazy ingredients I've never heard of. But, you've sold me and my heart on xanthan, so I suppose I'd probably enjoy a protein cake, too, if I tried it.

In other news, I'm making authentic southern biscuits for easter dinner tomorrow. I had to look really, really hard at whole foods to find shortening. SHORTENING? yes. omg. And there's butter in the recipe, too.

*falls over* *dies*... !!!

Tired- I'm a protein powder hussy- I get what's on sale. Lately MRM low carb vanilla is good, as is Lean Dessert from BSN. Also for a soy/chocolate I love Nature's path Skinny Mini. And if money were no object I'd get Jay Robb- he's fluffy and delish- and so are his protein powders.

Hi Deb, thanks for your contest entries. They both went thru :)

And yes "only" 2 hrs per post. When you think about it, that's insane when you look at everything ELSE that also needs to happen, not "just" the 2 hrs at the puter desk.

Sigh. It's too much. But I havent quit yet, have i :) YEs, I have toughened up since when I (we) both started blogging..feels like a lifetime ago!

Anyway the pea flour. In the raw vegan circles pea protein is pretty hot, that and hemp. I think that hemp tastes awful and I have tried some Vega mix that has pea, among others, protein in it..and not a fan. I wonder how diff pea protein and pea flour are? Just musing here.

I would love to make April's cakes but between the gluten, dairy, and eggs..yeah, not happening :)

April- OMG I feel like I'm in the presence of a star, like Angelina Jolie, or something!! Eek! :-) (you Wordpress folks are lucky you get ping-backs- we here at ghetto Blogger don't get no such blog-lovin' action).

Brittac & April- sadly the only place I know to buy the peanut flour is online but I really really recommend it- for everything, not just the cakes.

Aww Averie! Poor you! None of my recipes ever can work for you- you're such a dear to even read my blog any more!~ What about that egg-replacer- isn't it vegan? And coconut flour can work. Can you do rice protein powder? I love the cakes at night- they feel decadent but not heavy.

Toasted protein cake=genius!!! Why have I never thought of that?

Although did you know a tsp of baking powder has like 500+ mg of sodium...just a warning not to start dumping it too heavily into your protein concoctions :)

Hahhh! My totally "normal" cousin! I love that. Oh you mean you don't have 6 different types of almond butter in your fridge? WEIRD! ;)

Therese- NO I didn't know that baking powder has a zillion grams of sodium. Thanks for the heads up. OK I'm anal- I looked it up- for my recipe which calls for 1 tsp (vs Janetha's 34) it's 480mg. Baking soda is about 3X that!! Eeek.

UM yummmm. It's okay, this is perfect, because I just ordered a hella load of PB2 via snail mail. I am very excited. And I'm gonna have to make something to use it all up! I've never tried it before.. but I know one day when I'm truly on a post-college budget, I will be making peanut flour the Allie way. :)

yes, I do make protein cakes and I just kind of make them randomly. My fav was with cake batter protein powder but sadly it has run out and I have yet to re-up...
I LOVE your idea of toasting the cakes...
AND i have never thought of or actually even HEARD of peanut flour. That's interesting I am officially on the scour for PB subsitute things that are lower in fat and carbs and all that...love it, lady. thanks 4 the ideas. xo
