As usual, you are wondering what the heck I'm talking about. And as usual, happy mistakes seem to follow me into the kitchen. I stumbled upon this smoothie recipe TOTALLY by accident. This is why I call it "Multi-Tasking". You see, I was attempting to make a totally different COOKED brekkie, but half-way there I ended up with the concoction that is the star of today's post. So if you feel like a cold smoothie, you stop at the end of this post. If you want the same flavor in a cooked form, proceed to part II.
I will not yet divulge what it was I was attempting to cook up. I will just make you lose sleep for the next several days until I post part II. Aren't I mean? And delusional?
Also, the idea for the summer squash came from a reader named Heather @ Get Healthy With Heather. She was suggesting zucchini, but all I had on hand was yellow squash. Great idea, Heather!
So now I present you the Multi-Tasking Yellow Squash Smoothie:
Ingredients:
- A Yellow squash, microwaved
- Ice
- Splash water
- Sprinkle Stevia
- 1 Tablespoon Coconut flour
- 1/4 c Wheat Bran
- 1/2 Tsp Baking powder
- Sprinkle of thickeners (xanthan, guar gum or here: Marie Calendar's thickening Mix)
- Protein Powder- one scoop (optional... believe it or not...I forgot it to start and didn't miss it in flavor)
- Microwave squash for a minute on high
- Add ice and a splash of water because you realize you do not want the squash to be hot for the recipe that you had set out to make this morning.
- Add rest of ingredients: Coconut flour, thickener, wheat bran, protein powder if desired (and optional for part I: baking powder)
- Observe as concoction becomes a thick, gorgeous, creamy bowl of smoothie wonderment.
- Realize that you need to abandon your idea of the certain cooked breakfast that you had originally intended to make (to be revealed in Part II)
- Grab a spoon and eat your Smoothie-in-a-bowl, yum yum.
Grab your spoon and dig in. OR if you prefer a cooked breakfast, continue the recipe in the next post to be published in the next few days...Either way, it's all good.
Q: Do you ever put veggies in your smoothies? Does that just seem weird?

Yes - love my Dessert! I cannot find any other powder that makes shakes like it! I would have never thought to make a shake like this, but it sounds good. I think it would be really filling.

That looks very interesting! I think I'd only eat it if you made it for me, haha! :) Something tells me I'd mess it up somehow, haha!! It does look like it'd be very nutritious and filling!!
Ok I have to admit that is one odd-looking smoothie, but I don't doubt that it tasted pretty darn good. After all, you are the Smoothie Queen! :)

A few months ago I would have though squash in a smoothie was ridiculous, but then I started blended up spinach. So why not squash? Very intrigued about your next post! :)
Deb, I am in love with this post already!!! I have always wanted to incorporate more veggies into my breakfast foods, but have never gone beyond veggies w/ eggs or spinach smoothies (and haven't been able to figure out how to do this without eating straight-up salad, you know? I can have breakfast foods for lunch, dinner, or snacks, but at breakfast I CANNOT have rest-of-the-day food. Hmm). I cannot wait to try this concoction. Thank you for this little new years prezzie of a post!!!
I will probably omit the coconut flour, though...and add cinnamon....mmm, cinnamon :)

Katie- so glad you found this useful! Honestly, there is no vegetal taste at all.
FYI, I think that the coconut flour is what gave it the "oomph" but definitely feel free to change and modify- and let me know! Yes Cinnamon is a fab idea!

Wow! This sounds really interesting. I gotta say I just made my first protein smoothie/ice cream mixture last night and loved it. It was delicious. So now Im hooked on this=) Id love to try it with squash though. Sounds super healthy, filling and just delicious! Thanks Deb!

It's funny I call them smoothie-in-a-bowls too, but primarily, if it consists of ONLY protein powder and ice, then its protein ice cream. Typically I add fruit, pumpkin, greens, acai if its gonna be a smoothie in a bowl. But never have I ever done yellow squash! May try zucchini.. as yellow squash makes me gag. (Part of what made me hate healthy boring eats as a kid.) Blech.
