Recipe: Steve's birthday Peanut Butter & Chocolate Rollups


First of all HAPPY BIRTHDAY BRO!! He's my baby brother and I LLLLLOOOOOOVVVVVEEEEE him!

We celebrated a day early by going to an amazing Cuban restaurant in what he called "The armpit of the valley". I disagree- it was near the hills and such a pretty day!

Anyway, I wanted to make him something he'd love with his fave ingredients: Peanut butter and Chocolate (guess it runs in the family eh?)

So here they are- again everything just thrown together. BUT I DID MEASURE so that I could pass on the 411 to my readers who might attempt this yummy baked good:


Ingredients:

  • 2/3 tub Emerald Cocoa Almonds (or just almonds of your choice and cocoa powder)
  • 1/3 cup Mörk Sirap (what the heck is that? It's a Swedish syrup similar to MOLASSES...you can buy it at Ikea)
  • 1/3 c shredded coconut, unsweetened
  • heaping 1/3 cup oats
  • 1/3 + Peanut butter
  • small amount of water to bind

Method:
  • Grind almonds in food processor- grind first half into nut butter (I should have let this go about 3 minutes longer- it was a tad dry)
  • Grind second half of almonds into tiny chunks
  • Add oats & coconut, transfer everything to a bowl, adorn gloves
  • Add molasses or syrup
  • Add water if needed to make more pliable and less cracky
  • Roll out into a log and leave a center depression for the PB
  • Add PB- Dare yourself not to lick everything in sight
  • Roll up and pinch to close


Cow tip this baby

  • Steam the roll in a steamer or steamer oven (to retain moisture...I still haven't read the directions, but I will, just as soon as I read the manual for my camera)
  • Cut with a wire (I used a cheese slicer-wire thingy)


Yum=0...ready for their journey to the birthday boy! Despite the cheasy name, that wine is super high-end.

I always have to remind myself that you live in LA, a place I have yet to venture to for all its los angeles-ness. I think I've been to the beach in Santa Monica and that's it. And coming from a girl that has watched a lifetime's worth of "The Hills"- I feel like I've been, but NOPEE.

first of all that SIAB was incredible! and that is a lot of bang for your buck.. all that smoothie and only 250 cals? yum. my vita is still packed away, i need to get it out sooooon. and i am surprised that there is no liquid in that smoothie recipe! i make a similar one but always use almond milk. but that is smart to just up the pumpkin amount and eliminate the liquid.. oh.. i bet it is so creamy. esp with those gums you add.

haha.. ok, i do have molasses. actually aside fromt the almonds i have everythang for these! they look like almond rocas but WAY better! because they are filled with PBmmmmm. so, no steamer here? what is a girl to do?

Janetha. man you keep me on my toes. First of all...apologies..I made many mistakes and have fixed them:

1) Smoothie in a bowl Pumpkin/pecan...YES YES YES there's water and ice- to desired consistency- I always have water and ice *unless I use yogurt or tofu. SORRY

2)It's not Mjork sirap, it's actually Mörk sirap and it's from Sweden or Ikea. My BAD!! My Swedish rellies would KILL me (if they knew I had a blog) for misspelling. And it's just like Molasses!!

3). My Steamer oven= a stove stop steamer basket- only front-loading. Just be careful taking it in and out!

Janetha- I need you to proof read all of my posts from now on!!
