I converted my Dad into a smoothie lover a few years ago. Now he makes them almost daily. His personal fave is a tropical blend. He is visiting me and I wanted to pull out all the stops and make him a fabuloso tropical smoothie. I went out and bought everything that he puts into his smoothies, plus a few extras he's never had, like fresh young coconut. Come to think of it, I have never had it either so it was to be an adventure for me as well!
Here is what went into his smoothie:
- Papaya Juice
- Liquid Egg Whites (pasteurized)
- Protein powder
- Mango
- Pineapple
- Raw young coconut meat
- Dehydrated coconut shreds
- Banana
- Coconut water (straight from the young tropical mammary gland itself)
- ice
- To Open: Make a square, cut all the way through- use that muscle that you build in the gym but for goodness sake, DO NOT slip and cut your finger off!
Here is my first Young Coconut Opening- woo hoo! It was fun! You pour out (and save!!) the coconut water and scrape the insides with a spoon to retrieve the "meat"
Here are the goods in the VitaMix.
Here is the finished product. He likes his smoothies much runnier than I do.
Dad loved it and couldn't finish it as it was so filling (The precise reason that I <3>!)
For mine, I did a lower calorie version (I know I know, you're shocked):
- Coconut water from the bountiful cocomammary gland
- Mango, couple of slices
- Pineapple, few chunks
- Stevia
- Sugarfree Mango Torani Syrup (I know, booo, nasty chemical, bad Deb!)
- XG, GG (Xanthan and Guar Gums)
- a little raw coconut meat
It was really thick and creamy. I really, REALLY wanted to like it more than I did, but sadly, I did not (except the coconut and pineapple toppings). I needed more of the fruit as the taste was just a bit flat. The consistency was great though. Oh well, live and learn, right?
I couldn't finish all of it (as often happens with these super-filling smoothies). Despite the fact that it had so much wonderful stuff inside, I made the executive decision that I didn't love it enough to save it for later. Lately, I'm really making it a point to only eat what I am truly LOVING... Not just what I think I should be eating. So sadly, all this gorgeous bounty went to the big smoothie heaven in the sky (Reachable via the sink).
What do you do when you make something healthy but it just isn't "doing it" for you? Do you "sink" things if they turn out badly, or do you just eat it anyway?

I love coconuts... I just wish they weren't so hard to open!
hey deb! missed you while i was gone! i love the idea of TT, whenever i drink tropical drinks it reminds me of hawaii. i have never opened (cracked?) a coconut, you look like an expert at it! do you think the XG & GG make a big difference? i have never used those. that last photo is amaaazing, looks so creamy and perfect! i usually will eat something sub par anyway because i am too lazy to make something new, but if it is REAL gross i toss it! xo
It looks so good! Too bad the taste was not there. I hate it when that happens. I love using the coconut water and meat in my green monsters. Coconut and banana is a great combo.
I'm seeing this coconut-popping stuff on all sorts of blogs lately. It's very intriguing! I'm not quite sure I'm reading to conquer one yet. :)
I love how you've managed to convince people that some of the healthy stuff you eat & drink tastes good. My mom said my (diana's) vegan strata was good, but she was ready for meat the next night and has since been cooking Chris meaty meals since she's been here. I have NO problem with this, but I constantly get the question, "What do you cook Chris??" UGGGGGHHHHH!!!
Sorry - major digression there! I just wanted to say, "nice job on the smoothie!!! Looks yum-O!
Thanks for the coconut openin' tips. Ive actually never done it. I dont like coconut meat to be honest. It's ok, but it's really slimey for me. I much prefer it shredded and/or coconut milk or water. The meat is a little too slippery for me and it's kinda bland, you're right. It's just not my thing.
Which your question about dumping stuff? I hate to do it, and will pawn it off on my husband first but if he's like no babe, then I dump it. I made a salad dressing today that shoulda been good. I followed someone else's recipe (that's what I get for not just wingin' it on my own!) but it's just ok. Not bad, but not stellar and I've got like $5 worth of cashews and ingredients in it so Im cheap and dont wanna dump it but it'll go on hubs salad, not mine.
As for a comment of yours I read on No Meat Athletes new blog about being a blogger...and the self host thing. Girl, I felt the same way when I went with blogger and not wordpress. I had previously used blogger and was familiar and wordpress just was not clicking for me (and I really am not quite that much of a dumb blonde) but it just wasnt happening so I said F It and just went with blogger. I wish bloggers templates were easier to upload pics, drop in links, and reply to comments individually/privately.
I am still very confused about if I self hosted, would I still be able to stay with blogger? Because as much as I am annoyed with some aspects, I like other aspects. Or maybe there is software that would help. Ive tried 2 free trials of software and they both sucked so alas, I just post from blogger's free platform and roll with it.
Thoughts appreciated!
CCK-Not that hard to open
Janetha- Missed you too! I'm not an expert- that was my first nut to crack (sorry). YES YES YES YES XG, GG make a huge difference- ask HEAB.
Erika- CocoNanner sounds amazing
Haylie- don't fear the coconut :-)
Averie-Sooo timely...look at this website http://www.healthbloghelper.com/blog/caitlin-healthy-tipping-point-interview/
You might know it already- Caitlin talks about wishing she switched to WP sooner. I just can't do it. I'm not that blonde either and I really tried WP. Also the site from which the interview comes has some info about self hosting but they refer you to blue-something. Check it out!
Oh, and agreed on the slimey lack of taste on the coconut meat but apparently it's what gives the "ice creams" such amazing creaminess?? Really high in cals, so scares me a lot! :-O
Yummy!! Thanks for sharing!
Deb,
OH MY GOSH. Even though your smoothie wasn't fruity enough, it sure looked gorgeous in that bowl. So sweet of you to make that yummy concoction for your day. My dad would be like, where's the hershey's syrup and ice-cream. Hehe.
Love you. Almost called you just now, but then I realized it was 7:30 AM in your neck of the woods.
Oh, and I've been dumping lately - why eat/drink it if it sucks?
Oooooh, now that is just pretty. It would be cool if it were possible to cut the coconut in half and serve it in the bottom half! Do you think it could be done? Either way, I bet that was one delicious smoothie. Do the egg whites affect the taste much?
Thinny- I'm sure if you had enough elbow grease and a coat of armour you probably could do the coconut-in-half trick. I was thrilled just to cut it open from the top! :0)
